Technology meets tradition for successful yoghurt processing

Yoghurt production

The yoghurt success story of recent decades continues. Lactose-free, high protein, drinkable yoghurt and, not least, plant-based alternatives are just some of the current consumer trends driving growth. Nonetheless, a traditional focus on freshness, taste and creamy texture is still an essential part of yoghurt processing.

Analytical technology for yoghurt processing helps you exploit a developing product area while maintaining quality control standards. At milk intake, hygiene quality and freshness can be ensured for both food safety and brand consistency. During production, the flexibility of latest solutions allows you to test during production regardless of yoghurt’s variable viscosity. This offers a perfect analytical option for the fast product development demanded by constantly evolving consumer tastes.

In addition to the quality gains, the economic impact of analytical solutions is significant in the high-volume world of yoghurt processing. Quality targets are high, margins are tight and cost efficiency is essential in energy-intensive processes involving heating and cooling.

Yoghurt analysis process

Incoming milk

Standardise your fat and protein content for consistent products and maximum profit. Make on the spot checks on hygiene quality for optimal shelf-life and screen for accidental or deliberate adulteration of the milk supply.

In yoghurt processing

Control the efficiency of the separator with continuous in-line analysis to optimise the total solids contents of the final product.

Final products

Analysis at the critical final stage of production helps you to limit liabilities and potentially damaging product recalls. Instead you can enjoy the peace of mind that comes from knowing your products meet specifications.

Great yoghurt processing starts with consistent quality milk

Rapid multi-parameter analysis of incoming milk helps you to secure the freshness and quality characteristics you need to get things right from the start, including fat and total solids content and hygiene quality. Not least, you can make the best possible use of the milk for improved profit.

Benchtop analysers such as the versatile MilkoScan™ FT3 make use of a technology called Fourier Transform Infrared (FTIR) to make light work of the testing procedure.

What’s more, it is easy to maintain top performance all the time. It has a patented automatic performance check and adjustment function so there is no more instrument drift and variation of results between instruments. There is no more need to perform time-consuming standardisation checks or costly reference analysis.

The consistent performance also makes the validation of instrument results across multiple sites fully transparent. In short, it is the perfect tool for milk standardisation for yoghurt processing where maintaining quality at intake is critical for success downstream in the process.

MilkoScan™ FT3 has an automatic performance check that runs every two hours. This eliminates instrument drift and ensures stable results over time, making it the perfect solution for milk standardisation where consistent analytical performance is critical and especially where fleets of instruments are involved.

Hygienic quality for yield and specifications

In the finely tuned milk powder process, bacteria and somatic cell count of incoming milk can have a profound effect on efficiency and yield. In particular, spore-forming bacteria have become an increasing area of concern for dairy powder processors because of stringent customer specifications. A quick and reliable test to ensure low counts going into the process makes sense for any production.

New analytical technology helps you to handle incoming milk for optimal results downstream. Advances in analytical technology for checking the hygiene quality of milk now make it possible to test milk within minutes so that a result is available before it is unloaded from the delivery truck and mixed with the rest of the supply.

The innovation involves equipment using so-called flow cytometry technology for counting bacteria and somatic cells in the raw milk. The analyser incubates a sample of milk and then uses a laser to count individual bacteria and somatic cells that determine the hygiene quality and subsequent suitability for processing. Improving profit in Greek yoghurt processing

In high volume greek yoghurt processing, in-line analysis with the ProFoss™ 2 delivers vital data for fat, moisture and protein every few seconds, allowing automatic control of the process according to targets for quality and yield.

In-line analysis is all about putting an analysis unit and sensor directly in the production process. The results, which are delivered every few seconds, can then be conveniently viewed on a computer screen in a control room. This gives a continuous picture of key measurement parameters and, in turn, allows operators to take better control of the process. Using an automatic control loop, the adjustments can even be done in real-time.

Using the regulation of protein just after the separator as a case in point, the analyser is installed close to the separator and connected to the outlet via an optical fibre and a sample interface called a ‘lateral transmission probe’ that is especially designed for the job. Notably, it is insensitive to bubbles in the collected sample and has the right type of near infrared (NIR) wavelength required to penetrate the viscous nature of the material.

The latest in analytical technology, software and networking services help to ensure continuous high performance, for instance with performance monitoring against the highly stable FoodScan™ 2 benchtop analyser.

For a greek yoghurt production with a yearly ouput of 15 million kgs, moving protein closer to target by just 0.1% can lead to a saving of 110,000 Euros per year. Tighter process control leads to improved efficiency in yoghurt processing leading to further gains in economy and sustainability.
